Everybody Loves Mexican Night!

Smoky White Bean Quesadillas

Ingredients:
4 whole wheat tortillas
1 cup white beans
1/3 cup nutritional yeast
1/2 cup chopped tomatoes (fresh or canned)
few drops of liquid smoke
garlic powder
1/2 teaspoon salt (or to taste)
pepper or cayenne pepper to taste
cilantro and/or salsa for serving

Directions:
Blend together the white beans and chopped tomatoes until very smooth. Add nutritional yeast, liquid smoke, garlic powder, and salt and pepper to taste. (I don't use canned beans so I add a little extra salt. If you are using canned beans, you may want to rinse them and/or use less salt.) Blend again until well combined and smooth.
Heat a dry nonstick skillet over med-high heat. Put in a tortilla, spread one-half of the bean mixture on the tortilla, then top with another tortilla. Cook over medium heat until crisp on one side, then flip and repeat on the other side. Once it is cooked and the bean mixture is warm and gooey, remove from pan, slice into 6-8 wedges. Repeat with the other tortillas. Serve with cilantro and/or salsa.

Makes: 4 servings, Preparation time: 5 minutes, Cooking time: 5 minutes

Duda LOVED this recipe. I got a "You can make these whenever you want!" I didn't really get it. I thought it was kinda meh. And then it dawned on me in the middle of the night. I forgot the sprinkle the garlic powder on my quesadilla. That might have been the missing link.

Next time I will definitely add some tomatoes and shredded lettuce and maybe even some sauted onions. Guacamole would be an awesome addition too...oh man, I'm getting excited.

Oh, I forgot to mention I didn't have any liquid smoke, because honestly where the crap do you find liquid smoke?
