Caitlin's Really Lazy But Wants Dinner Veggie Stir-Fry

Get home from work, play with Lucy, coerce her inside, run around the neighborhood for 45 minutes, take a shower...and then make dinner? eh, not really feeling it. So on those days when I want something nutritious and yummy and don't really feel like going all out for dinner I make this meal.

Ingredients
2 tablespoons of oil
1 onion - chopped
2 cloves of garlic
1 package of frozen veggies - something with carrots/corn/snow peas/etc.
1/2 lb of tofu - cut into cubes
ground ginger
soy sauce

Saute the onions and garlic in the oil until the onion is white/translucent. Throw your bag of frozen veggies in the pan. Once the veggies are cooked add your tofu but be careful not to break the cubes apart - they crumble easily. Cook the tofu a little and then add a dash or two of ginger and lots of soy sauce. The amount of ginger and soy sauce used is really up to you. Last night I used a lot of soy sauce (twice around the pan) and it was delightful.
