Blueberry Pancakes

I went up to Vermont for Duda's grandmother's 80th birthday. We drove up Friday evening, got there Saturday morning at 2am, drove back Sunday morning at 11am, and got back to our house at 7:30pm. It was rough. But Gram is awesome and it was totally worth a 20 hour drive.
We stayed with Duda's parents. When you are a vegan house guest you can sense the anxiety about feeding you. I hate making people feel uncomfortable based on my personal decisions so I try to plan ahead and pack something I know I will be able to eat. I brought my hockey puck peanut butter chocolate chip muffins so I was ok for one morning. But I wanted to make them something for them so I decided I would make some pancakes on Sunday morning. All I needed was some soy milk. And holy crap is this recipe was easy -

Ingredients
1 cup flour(whichever kind you prefer)
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 cup soymilk
2 tablespoons vegetable oil


Directions
Set out all your ingredients.
Set a stove element with a pan to medium heat.
Combine the 4 dry ingredients (flour, sugar, baking powder, salt) in a bowl.
Add the soy milk and vegetable oil to your mixture.
Mix until smooth.
Now the pan should be ready for your batter, so spoon one pancakes' worth of the mixture into the pan.
Flip [carefully] when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
Repeat until the batter is gone

Since Vermont is the land of plenty when it comes to fruit and veggies, I made these guys bluebuerry pancakes by carefully folding them in so as not to smoosh them and make my batter purple. I also doubled the recipe which was a good thing because with four people those suckers were gone. I got lots of compliments. Du's dad said he was turning vegan, and while I know he was joking it was nice for them to maybe see that this vegan thing isn't so strange.
